Here’s a really easy one dish Amish baked oatmeal for the upcoming holidays. If you’re like me, you’re going to have a house full of family and friends to feed over the next few weeks. That’s where this Amish baked oatmeal with cranberries and walnuts comes in. It’s a wholesome, tasty breakfast that will please everyone in your house. All of this while only having one dish to clean up in the end.

I’d also like to mention that you can make this the night before and keep it in the refrigerator. Then just pop it in the oven the next morning! I’ve also baked this on the weekend, then cut it into portions and froze it. I grab a portion on my way out the door in the morning, microwave it for about a minute, and I have a hot breakfast at work. Does it get any better than that?

You know how much I love meals that only require minimal clean up, right? Which is why I’m on an epic search to bring you as many meals as I can that only require one dish. I have some one dish dinner recipes, like my one pot lemon greek chicken and rice, or my one pot chicken parmesan & pasta. But let me tell you, this Amish Baked Oatmeal with Walnuts & Cranberries takes the whole idea of baked oatmeal to another level entirely. I used rolled oats because I like that they’re a little bit less processed. But you can use instant if that’s what you have. Personally, I make sure mine are certified gluten free as well. 

I’ve also added dried cranberries and allspice, to give this dish a more festive cold-morning hot-breakfast holiday feeling. And it’s finally getting chilly down here in Florida! Even if it doesn’t quite feel like that winter holiday chill I’m used to having up north, it’s still better than not having cold weather at all during the holiday season.

Once the holiday season is over, however, all bets are off. You’ll find me at the beach, covered in sun screen and working my way through the next great novel on my list. Ah, Florida, I love your crazy warm weather.

The whole idea of how incredibly easy this Amish baked oatmeal is to clean up aside, this oatmeal is absolute perfection. Because any meal with only one dish to clean up is pretty much my version of heaven. Dried cranberries become juicy morsels of deliciousness, wrapped in the sweet flavors of brown sugar and aromatic allspice. Then, all of this is baked into soft wholesome oatmeal.

I’ve also tried something similar to this, but with some of the ingredients on the side. For example, bake up the oatmeal with the everything except for the berries and nuts. Then, I serve the Amish baked oatmeal alongside bowls of different toppings. Try nuts, fresh berries, bananas, seeds, and anything else your family and friends may like to eat in the morning.

Ingredients
  

  • 6 cups rolled oats, certified gluten free
  • 4 large eggs, beaten
  • 2 cups 2% milk
  • 1 1/2 cups brown sugar
  • 1 cup applesauce, unsweetened
  • 1 cup granny smith apple, shredded
  • 1 cup dried cranberries
  • 1 cup walnuts, chopped
  • 4 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp allspice

Instructions
 

  • Preheat oven to 400°F. Grease a large baking dish and set aside.
  • Add oats, brown sugar, baking powder, cinnamon, allspice and mix together. Pour in milk, eggs, applesauce, shredded apple, cranberries, and walnuts.
  • Stir all ingredients together until well mixed. Use a spoon to flatten the top of the oat mixture.
  • Bake for 30-40 minutes, or until top is golden brown.
