Now, into that Eggnog Rum Cocktail with Fudgy Chocolate Popsicles that I promised everyone! With the holidays right around the corner a festive, delicious and easy cocktail is a must. I am personally in love with eggnog during this time of the year, and chocolate, obviously lots of chocolate. To create a decadent, sweet and fun cocktail I have combined all favorites successfully.
But let me tell you, the star or should I say stars of these cocktail are the chocolate fudge popsicles and ice cubes that I made. You see, don’t you just hate when you add ice to your cocktail and it becomes so watery while the ice melts? Exactly! I hate it too, and we can’t let a watery cocktail ruin our holiday party! Chocolate icicles come to the rescue. They are super chocolaty, very creamy, cold and delicious. They add the right amount of chocolate flavor to your cocktail and at the end you just pop one in your mouth for the perfect luxurious chocolaty finish.

There is a rooftop lounge in New York City, they serve summer cocktails with boozy popsicles dipped into them. I thought that’s a genius idea, so I made the chocolate icicles to put into the drink and also the super fudgy and chocolaty popsicles, that you can dip into your cocktail and eat! Now that is a real treat!
Well, this Eggnog Rum Cocktail is super creamy, festive, easy to make, and it’s a chocolate lover dream come true! Eggnog Rum Cocktail with Fudgy Chocolate Popsicles

This Eggnog Rum Cocktail is super creamy, festive, easy to make, and it's a chocolate lover dream come true! The icicles have almost a pudding texture, so they don't fully melt, they keep your drink cold and when you are done you just pop it into your mouth for a chocolaty finish!

Ingredients

    Cocktail
  • 4 ounces vodka
  • 4 ounces rum
  • 2 ounces cream
  • 2 ounces eggnog
  • Chocolate Icicles & Popsicles
  • 4 ounces bittersweet chocolate, chopped
  • 4 tablespoons unsalted butter
  • 1/3 cup granulated sugar
  • 2 cups heavy cream
  • 7 grams unflavored powdered gelatin
  • pinch of salt

Instructions

    Popsicles
  1. Make the icicles and popsicles in advance. You will need a silicone mold for this.
  2. In a bowl, add the gelatin to the heavy cream and let it stand for 10 minutes to blossom.
  3. In a sauce pan over medium heat, combine chocolate with butter and sugar. Stir with a spatula or wooden spoon until combined.
  4. Once combined, reduce heat to low and slowly add the heavy cream with the gelatin into the chocolate mixture whisking constantly.
  5. Whisk and cook for 7-10 minutes until the mixture is fully combined, the gelatin has melted and an instant thermometer reads 170F.
  6. Remove from heat and let it cool at room temperature for 10 minutes. Don't let it cool for more than 10 minutes, as the gelatin will start hardening.
  7. Pour the mixture into 3 popsicle molds and the rest into a mini cakes/truffle silicone mold or ice silicone mold. Tip: place the silicone mold on a cutting board before pouring the mixture into it, so its easier to transfer to the freezer. Place in the freezer for at least 12 hours before serving.

  9. In a drink shaker combine all the cocktail ingredients. Shake well.
  10. Add a few chocolate icicles (3-4) to a glass. Pour the cocktail mixture over it and dip a chocolate popsicle into the glass.
  11. Serve immediately.

*If you are gluten free, be sure to check with the brand of liquor or eggnog to make sure it is gluten free, as this can vary by brand*
