Slow Cooker Carne Asada Tacos are an easy weeknight dinner. Flank steak is marinated in citrus, cumin, and spices while it cooks low and slow all day. The meat is so tender that it’s then shredded with a fork and served in a warm corn tortilla.
Here’s another easy weeknight slow cooker recipe for your dinner rotation. Slow Cooker Carne Asada Tacos are tender, juicy, and super filling. They’ll make you wish you could have tacos every night! Although, we already wish we could have tacos every night, don’t we? This flank steak sits in citrus, which makes it super flavorful, and a blend of spices like cumin, oregano, and chili powder for a kick of spice!
You know how much I love my slow cooker, right? Well, these slow cooker carne asada tacos are no exception to my literally everything can be made better with a slow cooker rule. The meat just comes out so juicy and tender that it literally falls of the fork. And the flavors of lime and cumin just belong in a warm corn tortilla. It’s kind of like they were meant for each other.
If you like this recipe, you can check out my slow cooker taco meat here, using ground turkey to make it a bit lighter.
I even like to add some cilantro straight to the slow cooker, right after the meat is done. On another note, do you like cilantro? Apparently, your love (or hate) of cilantro is determined by your genetics. To some people, it tastes awesome. And to others, who carry the cilantro-hating gene, it tastes like soap.
I’m pretty sure I missed this gene, because I’m a cilantro lover through and through.
This recipe is mostly about the meat, so you can add your favorite taco toppings here. When it comes to tacos, I love to add a big scoop of pico de gallo, some cilantro, and a drizzle of garlic aioli. Sometimes I’ll also add some avocado or fresh lettuce, or even whatever fresh vegetables I have lying around. I’ve added anything from zucchini, to mushrooms or carrots. They’re not technically traditional slow cooker carne asada tacos toppings, but I’m all about the healthy ingredients nowadays. I was also thinking of serving this alongside something like this Sweet Chili Lime Rice Bowl with Edamame and Mango from A MindFull Mom.
As a general rule of thumb, if you can get a vegetable in there, just go for it!
