Instant Pot Pork Loin Roast (Pressure Cooker) 

Instant Pot Pork Loin Roast (Pressure Cooker) is one of my favorite instant pot dinners to make on a busy weeknight! It’s really quick to throw together, and once it’s in the instant pot you just leave it alone until the pressure cooker has worked its magic. Plus, it looks great on the dinner table, and is guaranteed to keep your hungry family happy!

Is there a difference between pork loin and pork tenderloin?

  • Pork loin is more like a roast, a thicker piece of meat that can almost be sliced into steak like portions. It’s a very lean cut of meat, so you have to be careful with how you cook it because it has a tendency to dry out.
  • Pork tenderloin a rounder and thinner piece of meat and from a different part of the pig. Don’t get these two mixed up as the cooking times and temperatures are much different.

What’s the best way to cook instant pot pork loin roast?

Pork Loin can be roasted, grilled, done in the slow cooker or Instant Pot. The choice is yours! But if you want it tender and juicy every time, then the best way to cook pork loin is in the Instant Pot. And hands down, the least amount of work.

Can you add pork loin to the instant pot frozen?

I typically don’t like putting roasts in the instant pot frozen. The reason is because you have to increase the time to almost double just to make sure it cooks at the right temperature, and pork loin already has the tendency to dry out because of how lean it is. It’s just not worth it for this instant pot pork loin roast, at that point I would defrost it for a bit in the microwave and then add it to the instant pot half frozen, to cut the time down. Just add an additional 3 minutes to your timer, and check the temperature with a meat thermometer when you’re done!

How do you marinate this pork loin instant pot recipe?

To marinate this pork loin instant pot recipe, first mix your ingredients together in a plastic ziplock bag. Then place the pork loin in the bag and let it marinade anywhere from an hour to overnight in the refrigerator. I do something similar with my London Broil Marinade. It just adds a ton of flavor to the meat, which only gets enhanced when you add it to the pressure cooker! Honestly, this is my favorite way to make this pork loin instant pot recipe. It’s only a close second to my BBQ pork loin, which would also work in the instant pot! Just use the same ingredients, but follow the cooking directions below.

How to cook pork loin in an Instant Pot?

Add your chopped root veggies to the bottom of the instant pot. Place pork loin in the instant pot and either marinate first, or whisk together and pour marinade over pork loin. You can also add more or less salt and pepper to your own taste.

Set your Instant Pot on manual setting to High for 20 minutes. When done, let it naturally release on its own.

Now sit down and enjoy the most moist and tender Instant Pot pork loin roast you’ve ever had in your life. I like to server this with garlic mashed potatoes and veggies. No one walks away from the table without a smile and a full belly!

Ingredients
 
 

For the Marinade

  • 1 tsp garlic powder
  • 1 tbsp dried rosemary
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried thyme
  • 3 tbsp olive oil
  • 1/2 cup white wine

For the Pork Loin

  • 2 lbs pork loin roast
  • 3 large carrots, peeled and chopped
  • 1 medium onion, chopped

Instructions
 

  • Add olive oil, wine, and spices to to ziplock bag. Add pork loin to bag and cover with marinade. Refrigerate 1 hour minimum.
  • Add carrots and onion to bottom of instant pot. Place pork loin on top, and pour any remaining marinade over pork.
  • Place lid on instant pot and put valve in sealed position. Set pot to manual setting on High for 20 minutes. When time is up, allow the pot to release naturally.
