Mexican Street Corn Salad

Mexican Street Corn Salad is one of my favorite potluck recipes, made with canned or frozen corn kernels mixed with a spicy creamy dressing and topped with fresh cilantro and cheese. It’s ready in just 20 minutes, and can be made ahead of time for busy days! Another bonus is that this is a really budget friendly side dish recipe because it’s mostly corn. You can leave the cilantro off if you don’t have a taste for it, and make this as spicy (or not spicy) as you’d like it!

What is Mexican Street Corn made of?

Traditional Mexican Street Corn (also called Elote) is made of corn on the cob steamed or grilled, then dressed with mayo, crema, lime juice, and spices, then topped with cotija cheese. Mexican Street Corn Salad is pretty similar, but you can add other vegetables if you’d like.

What else can you add to Mexican Street Corn Salad?

I like making Mexican Street Corn Salad when I need a quick and easy corn recipe, but also when I have a few leftover ingredients I need to use up! Try adding chopped red onion, bell pepper, jalapeño, or english cucumber. The trick is to dice everything to about the size of the corn kernels, to make the dish aesthetically pleasing.

Tips for Making Mexican Street Corn Salad

  • You can serve mexican street corn salad warm or cold. Personally, I prefer it warm. But if I were bringing this to a potluck, I wouldn’t worry about warming it up first.
  • If you can’t find cotija cheese, you can use feta cheese as a close substitute.
  • The cayenne pepper is optional, you can add more or less to get to your spicy preference. Or leave it out altogether if you don’t want it spicy at all. Likewise, you can also use regular paprika if you don’t enjoy the smokey flavor.
  • You can add more or less corn, depending on how much you have. This recipe is pretty forgiving.
  • Lighten this recipe up even further by swapping the mayo and sour cream with greek yogurt. Keep in mind that it will have some of the taste of greek yogurt.

Can you make Mexican Street Corn Salad ahead of time?

You can definitely make Mexican Street Corn Salad ahead of time. In fact, making it a day ahead gives the flavors a chance to combine. Just give everything a good stir before serving, and save the fresh cilantro for right before serving.

Mexican Street Corn Salad must also be stored refrigerated in an airtight container for food safety.

Ingredients
 
 

For the Corn

  • 2 tbsp unsalted butter
  • 6-7 cups corn kernels, (3 - 14oz cans)
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro , chopped
  • 1 medium lime, cut into wedges (optional for garnish)

For the Dressing

  • 1/2 cup light mayo
  • 1/4 cup light sour cream
  • 1 1/2 tbsp lime juice
  • 1/2 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1/4 tsp cayenne pepper

Instructions
 

  • Melt butter in a skillet over medium heat. Add corn and cook for 5-10 minutes, until corn is heated through, stirring frequently. While the corn is cooking, whisk together the mayo, sour cream, and spices and set aside.
  • Pour corn into a large serving bowl and stir together with dressing. Top with cotija cheese and fresh cilantro. Serve with lime wedges.

Notes
