I’m on a slow cooker kick lately. It just makes life so much easier! And between working, blogging, and other activities, I find it’s sometimes 8 or 9pm before I’m actually thinking of dinner. Raise your hand if you can relate! 

Which is why I’m collecting slow cooker recipes, like this crock pot honey garlic chicken recipe. You literally just throw the chicken in there, whisk together a quick honey garlic chicken sauce, pour it in and voila! You’re done. That’s all it takes to make this crock pot honey garlic chicken recipe!

Even I can’t mess this recipe up, and believe me, I’ve tried!

Honey Garlic Chicken Thighs, Drums, or What?

Ok so, you don’t necessarily have to make honey garlic chicken thighs. In fact, this slow cooker honey garlic chicken recipe will work with whatever cut of chicken you happen to have on hand. Drumsticks, chicken breast, wings, whatever. Just remember that if you do use something like wings or drumsticks, they’ll probably be falling apart by the time they’re ready. Which isn’t necessarily a bad thing!

But if I have the choice, I usually prefer to make honey garlic chicken thighs, with bone and skin on. Chicken thighs in general turn out really tender and juicy without much effort. Plus, they’re usually about half of the price of chicken breast. Bonus!

How To Make The Honey Garlic Chicken Sauce!

What we have here is really more of a honey garlic chicken broth. But you can totally make this into a sauce! The secret is to add corn starch before the dish heats up. Corn starch thickens sauces when it’s used from cold to hot. But if your dish is already hot, it won’t usually do much. So, it’s really important that you whisk it in at the beginning of the dish. The more corn starch you add, the thicker of a honey garlic chicken sauce you’ll get.

For this recipe, I used 1 tbsp of corn starch. My chicken thighs were really juicy, so they released a lot of chicken broth when they were cooking. If you add any veggies – like onions, carrots, etc. – then you’ll have more liquid to deal with! So, I might add an extra tbsp of corn starch next time. However, I also really like how this turned into a broth, because the rice just soaked it up in a really delicious way.

Don’t go overboard, though! Or you’ll end up with a honey garlic chicken sauce that’s way too thick. I wouldn’t use more than 3 tbsp corn starch, and that’s only if you’re planning on seeing a lot of liquid releasing from the chicken and from added veggies.

Can this be a honey garlic chicken marinade?!

The quick answer is, YES! This can absolutely be a honey garlic chicken marinade for your honey garlic chicken thighs! Whisk everything together, but leave out the corn starch. Pour it over the raw chicken in a ziploc back either the night before or a few hours before, and put the chicken back in the refrigerator to soak it up. The next day, you can either cook the chicken in a pan with whatever extra honey garlic chicken marinade you have, or grill it. Or, you can throw it in the oven, if you don’t have time to wait for the crock pot honey garlic chicken recipe. So good!

Ingredients
 
 

  • 5 medium chicken thighs, with bone and skin
  • 1/2 cup honey
  • 1/4 cup balsamic vinegar
  • 1 tbsp corn starch
  • 2 tbsp gluten free soy sauce
  • 1/2 tbsp sesame oil
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1/4 tsp ginger powder
  • 1/2 bunch green onions, chopped

Instructions
 

  • Place chicken thighs in slow cooker. In a bowl, whisk together oil, spices, honey, soy sauce, vinegar, and corn starch.
  • Pour sauce over chicken. Cook on HIGH 4 hours, or LOW 8 hours. Chicken is done when cooked through. 
  • Top with green onions and serve over rice.
