  • 1 lb shrimp peeled, deveined, tail removed
  • 3 cups cooked white rice
  • 1 cup bean sprouts
  • 1/2 cup onion diced
  • 1/4 cup peas
  • 1 medium green bell pepper seeds removed, diced
  • 2 large eggs beaten
  • 3 tbsp vegetable oil
  • 2 tbsp gluten free tamari
  • 1/2 tbsp sesame oil
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  1. In a large skillet or wok, heat vegetable oil. Add onions, bean sprouts, peas, and bell pepper. Cook until onions are soft, about 5 minutes. Add shrimp and cook until shrimp turn pink and are no longer opaque, about 3-4 minutes, stirring.

  2. Add rice, spices, tamari, and sesame oil. Stir everything together for 1-2 minutes to heat through, then push everything to one side. Add eggs to empty side and scramble, 2-3 minutes. When eggs are cooked through, mix in with rice. Stir everything together and serve.
