In a bowl stir together apples and lemon juice. Set aside.
In a large dutch oven, before turning heat on, whisk together water, corn starch, sugar, cinnamon, nutmeg, and salt. Turn heat on to medium and bring to a boil, whisking continuously.
Add apples and simmer 8-10 minutes, stirring often, until apples are soft. Remove from heat and cool.
