Instructions
Cook pasta to al dente (not quite cooked through) and rinse with cold water, about
5 minutes
.
In a large skillet over medium-high heat, saute vegetables in 2 tbsp olive oil and seasoning for
3-4 minutes
, until just soft.
Add pasta and remaining olive oil and toss together until pasta is warmed and cooked through before serving.
