Instant Pot Apple Crisp is the perfect dessert for the holidays, made with sweet granny smith apples, brown sugar, gluten free oats, and ready in under 15 minutes!
Add apples to the instant pot. Add lemon juice, cinnamon, white sugar, baking powder, apple cider, and vanilla extract. Stir until apples are evenly coated.
In a medium mixing bowl whisk together oats, flour, brown sugar, white sugar, and spices. Add butter and work into mixture using hands, until everything looks wet like a dough.
Crumble oat mixture on top of apples evenly. Close the lid to the instant pot and seal the pressure valve. Set on manual setting on high for 1 minute. When the time is up, release the pressure valve before opening the lid.
If you want a crispy topping, transfer to a baking dish and broil in the oven for 2-3 minutes. Serve warm and top with vanilla ice cream if desired.

Click on the time in the instructions to start a timer!If your apples released too much moisture and you want a thicker sauce on the apples, take the lid off of the instant pot and turn on saute mode for 2-3 minutes, using a spoon to move the apples around a little bit (without disturbing the topping too much).
