Baked Sweet Potato Rounds with Goat Cheese & Honey
Baked Sweet Potato Rounds with Goat Cheese & Honey are an easy appetizer choice made with sweet potatoes, creamy goat cheese, craisins, walnuts, and drizzled with a sweet glaze of cinnamon and honey. They're bite-sized and gluten free!
Preheat oven to 350F. Line a baking sheet with parchment paper.
Cut sweet potatoes into 1/2-inch thick rounds. Place on baking sheet, spacing evenly. Spray sweet potatoes with cooking spray, turn over and spray other side.
Sprinkle sweet potatoes with cinnamon evenly. Bake 10-12 minutes, then flip rounds over using a spatula. Bake another 10-12 minutes, or until potatoes are soft.
Remove sweet potatoes from oven and allow to cool. Top evenly with goat cheese, craisins, and walnuts. Drizzle each round with honey and serve.
