For the Marinade
  • 1 tsp garlic powder
  • 1 tbsp dried rosemary
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp dried thyme
  • 3 tbsp olive oil
  • 1/2 cup white wine
For the Pork Loin
  • 2 lbs pork loin roast
  • 3 large carrots peeled and chopped
  • 1 medium onion chopped
  1. Add olive oil, wine, and spices to to ziplock bag. Add pork loin to bag and cover with marinade. Refrigerate 1 hour minimum.

  2. Add carrots and onion to bottom of instant pot. Place pork loin on top, and pour any remaining marinade over pork.

  3. Place lid on instant pot and put valve in sealed position. Set pot to manual setting on High for 20 minutes. When time is up, allow the pot to release naturally for about 10 minutes.
