These gluten-free muffins are a delicious addition to your morning breakfast routine. Moist, sweet apples and substantial oatmeal, these freeze and travel well. Top with cinnamon and serve warm or cold.

Ingredients
  • 1 cup all purpose flour gluten free
  • 1 cup instant oats
  • 1 cup white sugar
  • 2/3 cup light cream
  • 1/2 cup applesauce unsweetened
  • 2 large eggs
  • 1 granny smith apple peeled and chopped into small pieces
  • 2 1/2 tsp baking powder double acting
  • 2 tsp vanilla extract
  • 2 tsp ground cinnamon
  • 1/4 tsp kosher salt
Instructions
  1. Preheat oven to 350°F.
  2. In a mixing bowl, add flour, oats, baking powder, salt and cinnamon. Stir together until combined.
  3. Add eggs, light cream, applesauce, and vanilla extract to mixing bowl. Mix until all ingredients are combined.
  4. Stir in granny smith apple pieces.
  5. In a paper-lined muffin pan, spoon in batter evenly, filling each muffin tin almost to the top.
  6. Bake muffins for 20-25 minutes, or until golden brown and a toothpick comes out clean.
