Ingredients
  • 6 cups broth vegetable or chicken
  • 2 cups half and half
  • 1 1/2 lbs boneless skinless chicken breast
  • 1 1/2 cups wild rice uncooked
  • 1 medium yellow onion chopped
  • 1 cup celery chopped
  • 1 cup carrots sliced
  • 1 cup mushrooms sliced
  • 1 tsp salt
  • 1 tsp curry powder
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1/2 tsp mustard powder
  • 1/2 tsp black pepper
Instructions
  1. Place all ingredients (except for half and half) in crock pot. Cook on HIGH for 4 hours or LOW for 8 hours, or until chicken is cooked through. 

  2. When time is up, remove chicken breast and use two forks to shred chicken. Return to crock pot. 

  3. Stir in half and half until well combined. Let cook an additional 20-30 minutes. Stir before serving.
