Ingredients
For the Crust
  • 3 tbsp unsalted butter melted
  • 1 cup gluten free "oreo" cookies crushed
For the Filling
  • 2 8 oz packages cream cheese
  • 1 1/2 cups heavy whipping cream cold
  • 3/4 tsp cream of tar tar
  • 1/2 cup white sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
For the Topping
  • 3 cups blueberries
  • 1/2 cup water
  • 1/2 cup sugar
  • 2 tbsp corn starch
  • 2 tbsp lemon juice
  • 1 tbsp vanilla extract
Instructions
For the Crust
  1. Grease a 9-inch springform pan.
  2. In a bowl, pour melted butter over crushed cookies and mix together until completely combined.
  3. Press cookies into springform pan, spreading evenly.
  4. Set springform pan aside.
For the Filling
  1. Pour whipping cream into a stand mixer bowl. Add cream of tar tar and whip on med-low speed, until cream begins to form stiff peaks (about 3-5 minutes).
  2. Move whipped cream to a separate bowl.
  3. In a clean bowl, use stand mixer to beat together cream cheese, lemon juice, sugar, and vanilla extract.
  4. Slowly add whipped cream into cream cheese mixture, until just combined.
  5. Pour filling into springform pan, spreading evenly over cookie crust.
For the Topping
  1. Add blueberries, vanilla extract, sugar, and lemon juice to a saucepan.
  2. Whisk together water and corn starch, and pour over fruit. Cook on medium heat.
  3. Bring to a boil, stirring frequently.
  4. Lower heat to a simmer and allow to thicken (about 5 minutes).
  5. Remove from heat and allow to cool.
  6. Once completely cooled, pour filling over cheesecake.
  7. To set, refrigerate cheesecake for 2-3 hours before serving.
