Ingredients
  • 1 1/2 lbs chicken breast cut into 2-inch pieces
  • 1 29oz can diced tomatoes, drained
  • 1 10oz box gluten free penne pasta, cooked al dente and drained
  • 3 cups shredded mozzarella cheese
  • 1/2 cup dry white wine
  • 1 8oz package mushrooms sliced
  • 1 medium yellow onion chopped
  • 2 cloves garlic minced
  • 3 tbsp unsalted butter
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp ground thyme
  • 1/2 tsp salt
  • 1/2 tsp pepper
Instructions
  1. Preheat oven to 375°F.
  2. In a large skillet over medium heat, melt butter. Add onion and garlic and cook until softened (2-3 minutes).
  3. Add mushrooms and chicken and cook until chicken is almost cooked through.
  4. Add white wine and cook an additional 2-3 minutes.
  5. Stir in tomatoes, oregano, basil, thyme, salt and pepper.
  6. Add pasta and stir to combine.
  7. Add 2 cups mozzarella and stir to combine. Top with remaining cup mozzarella.
  8. Put skillet in the oven and bake 15 minutes, or until cheese is melted and beginning to turn golden brown on top.
Recipe Notes

You can use gluten free or regular pasta with this recipe. If you are using gluten free, only cook pasta until it is very al dente (still a little bit hard), and rinse with cold water to prevent it from cooking further.
If you don't have a skillet, make this recipe in a pot or large sautee pan. Instead of putting into oven, when you get to this step just place a lid or piece of tinfoil on top of pot until cheese melts, then serve.
