One Pot Chicken Penne with Tomato and Basil made with savory herbs, chicken, and penne pasta sautéed in a white wine tomato sauce, then topped with mozzarella cheese and baked to perfection, ready in under 30 minutes!
In a large skillet over medium heat, melt butter. Add onion and garlic and cook until softened (2-3 minutes).
Add mushrooms and chicken and cook until chicken is almost cooked through. Add white wine and cook an additional 2-3 minutes.
Stir in tomatoes, oregano, basil, thyme, salt and pepper. Add pasta and stir to combine.
Add half of the mozzarella and stir to combine. Top with remaining mozzarella.
Put skillet in the oven and bake 15 minutes, or until cheese is melted and beginning to turn golden brown on top.

You can use gluten free or regular pasta with this recipe. If you are using gluten free, only cook pasta until it is very al dente (still a little bit hard), and rinse with cold water to prevent it from cooking further.
