Bacon Egg & Cheese Baked Avocados are the perfect start to your morning. Nutritious, protein-rich eggs baked inside of wholesome avocados, sprinkled with cheese and topped with pieces of savory bacon. Only 4 ingredients and gluten free, it really doesn't get much better than this!

Ingredients
  • 2 avocados cut in half and seed removed
  • 1/4 cup shredded cheddar cheese
  • 4 large eggs
  • 4 pieces of bacon cooked crispy and broken into pieces
  • salt and pepper to taste optional
Instructions
  1. Preheat oven to 400°F.
  2. Place avocados in a small baking dish, open-side-up.
  3. Sprinkle cheese evenly over each avocado.
  4. Crack egg into one avocado (where the seed used to be). Repeat for all avocados.
  5. Bake for 15-20 minutes, or until eggs are cooked through.
  6. Remove from oven, top with bacon and serve.
Recipe Notes

I cooked up a whole package of bacon and served it on the side. My family also used it to make sandwiches later.
You can add salt and pepper to taste here. I also topped mine with salsa.
