For the Cake
  • 1 3/4 cups gluten free all purpose flour
  • 2 cups white sugar
  • 2 large eggs
  • 1 cup light cream
  • 1 cup strong brewed coffee
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup vegetable oil
  • 1 tbsp vanilla extract
  • 2 tsp baking powder double acting
  • 1 1/2 tsp baking soda
  • 1 tsp salt
For the Frosting
  • 3 1/2 cups confectioners sugar
  • 2 8oz packages cream cheese, softened
  • 8 tbsp unsalted butter softened
  • 2/3 cup milk
  • 1 1/2 cups unsweetened cocoa powder
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon

  • Chocolate Shavings
For the Cake
  1. Preheat oven to 350°F.
  2. In a mixing bowl combine dry ingredients (flour, sugar, cocoa, baking powder, baking soda, salt).
  3. Add eggs, cream, oil, and vanilla extract.
  4. Slowly stir in coffee until all ingredients are well combined.
  5. Pour batter evenly into two greased 9-inch baking pans.
  6. Bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Let cool before frosting.
For the Frosting
  1. In a stand mixer, combine cream cheese and butter until smooth.
  2. Add vanilla extract and milk.
  3. Slowly add confectioners sugar and cocoa powder.
  4. Mix until all ingredients are well combined.
Recipe Notes

This batter can be thin, but it will bake up just fine!
