Sausage Hash Brown Casserole is savory sausage with cheese, eggs, spicy poblano peppers, and shredded hash browns. It has a really creamy texture with a kick of heat, plus it's a really simple breakfast that feeds a crowd. And it can be made ahead of time!
Preheat oven to 350F. Grease a large baking dish.
In a large sauté pan brown sausage until just cooked through. Add to large mixing bowl.
Stir together with poblano pepper, onion, hash browns, mozzarella, and 1 cup cheddar cheese. Combine with half & half and eggs.
Pour into baking dish and flatten top until even. Sprinkle remaining cheddar on top. Bake 35-40 minutes, or until eggs are cooked through.
