Best Tofu Scramble Recipe is a quick and easy breakfast scramble using tofu instead of eggs, along with savory spices and veggies. It's gluten free, vegan, and only takes 20 minutes to throw together!
Place block of tofu on a paper towel. Take another paper towel and place it on top of the block and gently press down. Repeat a few times to get as much water out of the block as possible. Set aside.
In a saute pan over medium heat, add oil, onion, and spices. Stir occasionally, until onions are translucent, about 5 minutes.
Add all other veggies and cook until soft, about 5 minutes.
Crumble tofu into the pan and stir to combine. Cook another 5 minutes, stirring often, then serve.
I like to serve this with some sliced tomato, or some warm corn tortillas.
