Ingredients
  • 5 medium sweet potatoes washed
  • 4 cups gluten free instant oats
  • 1 cup light cream
  • 1/2 cup maple syrup or honey
  • 1/2 cup chopped walnuts
  • 3/4 cup berries dried or fresh
  • 2 tbsp chia seeds or ground flax seed
  • 2 tbsp vegetable oil
  • 1 1/2 tbsp pumpkin pie spice
  • 1/2 tbsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp sea salt
  • *cooking spray to grease baking pan
Instructions
  1. Preheat oven to 400°F.
  2. Use a fork to poke holes in sweet potatoes. Place on baking sheet and bake 40-45 minutes, or until soft and a fork goes through easily.
  3. Remove sweet potatoes from oven and allow to cool.
  4. Reduce oven to 350°F.
  5. Once cooled, scoop out middle of potato and discard skins.
  6. In a mixing bowl, stir together all ingredients (sweet potatoes, oats, maple syrup. light cream, almonds, berries, seeds, pumpkin pie spice, oil, nutmeg, sea salt) until completely combined.
  7. Grease a 9x13-inch baking dish.
  8. Press mixture into dish and smooth out on top until even.
  9. Bake for 30-35 minutes, or until golden brown on top.
  10. Allow to cool and cut into bars.
