This Flourless Chocolate Cake Recipe From Scratch really hits the spot when you have a chocolate craving. It's both light and satisfying at the time time. It's also a completely gluten free and dairy free cake!
Preheat oven to 350F. Grease a springform pan and lightly dust with 1 tbsp cocoa powder and set aside.
In a medium microwave-safe bowl add butter and chocolate. Microwave for 45 seconds, and stir until melted and smooth. Microwave an additional 15 seconds if needed. Set aside.
In another medium bowl, whisk together egg yolks, vanilla, and 1/2 cup granulated sugar. Whisk in chocolate, sour cream, and cocoa powder.
In a clean bowl (or a stand mixer) add egg whites and salt. Beat on medium-high until stiff peaks form. Add remaining sugar slowly, then almond flour. Pour egg whites into batter and stir gently until incorporated.
Pour into springform pan and bake 35-40 minutes, or until a toothpick comes out clean. Allow to cool before topping with powdered sugar and berries.
