Flourless Chocolate Cake Recipe From Scratch

Here’s a recipe that I’m really excited to share with you on a Monday. Because we all know that chocolate fixes were essentially made for Mondays. Not only is this chocolate cake flourless and dairy free, but it’s also made from ingredients that you probably already have in your pantry! In fact, the only thing I had to pick up was baker’s chocolate, but I’m sure chocolate chips would work in a pinch.

I know there are a few really good gluten free cake mixes out there, but having a good chocolate cake recipe from scratch in your back pocket is almost a necessity. Not only will you be able to control key things – like the amount of chocolate in it! – but you’ll also have something different to offer your guests when it comes to dessert. And because this is a flourless chocolate cake, you won’t have to worry about the gluten free flour blend changing the consistency or flavor. Win!

Dairy Free Cake

This is a gluten free cake AND a dairy free cake!

One thing I’m trying to do more of is find recipes that don’t use a lot of dairy ingredients. For one reason, I always end up running out of milk the second I decide that I want to bake something. Raise your hand if you know the feeling! But also because I have a few friends who cannot have any dairy in their diets at all. And for them, I want to have a few desserts that everyone can enjoy, like this dairy free cake. And if you’re a regular visitor to my blog, you know that all of my cakes are gluten free cakes!

This cake does use eggs, though. While not in the dairy category, I know a lot of people mentally lump them into the same category. In this dairy free cake, you’re not getting the same protein as you would with a regular recipe. So the protein from the eggs is playing a key role here. Not to mention, whipping the egg whites really gives it that great light consistency.

So, while this is a dairy free cake, and a gluten free cake, it is not an allergen free cake.

Let’s take a minute to talk about almond flour chocolate cake. Flourless cake recipes sometimes use almond flour because it’s not really a flour. It is high in protein and healthy fats, though! It’s more like if you took almonds and put them into the food processor until they were ground really small. Meanwhile, traditional flour comes from grains. Almond flour chocolate cake has a really great nutty underlying flavor to it, which goes really well in this kind of dessert.

Ingredients
 
 

  • 3 tbsp cocoa powder
  • 3 oz baker's chocolate, broken into pieces
  • 1 tbsp unsalted butter
  • 1/2 cup sour cream
  • 5 large egg whites
  • 3 large egg yolks
  • 3/4 cup granulated sugar
  • 2 tsp vanilla extract
  • 2/3 cup almond flour
  • 1/4 tsp salt
  • 1 tbsp confectioners sugar
  • berries, (optional topping)

Instructions
 

  • Preheat oven to 350F. Grease a springform pan and lightly dust with 1 tbsp cocoa powder and set aside. 
  • In a medium microwave-safe bowl add butter and chocolate. Microwave for 45 seconds, and stir until melted and smooth. Microwave an additional 15 seconds if needed. Set aside.
  • In another medium bowl, whisk together egg yolks, vanilla, and 1/2 cup granulated sugar. Whisk in chocolate, sour cream, and cocoa powder. 
  • In a clean bowl (or a stand mixer) add egg whites and salt. Beat on medium-high until stiff peaks form. Add remaining sugar slowly, then almond flour. Pour egg whites into batter and stir gently until incorporated. 
  • Pour into springform pan and bake 35-40 minutes, or until a toothpick comes out clean. Allow to cool before topping with powdered sugar and berries.
