Slow Cooker Candied Sweet Potatoes are the PERFECT Thanksgiving side dish, made with sweet potatoes simmered in a sweet and buttery sauce with warm spices until tender, then topped with marshmallows!
Add the sweet potato pieces to the slow cooker. In a small bowl, whisk together the brown sugar, granulated sugar, and spices. Pour the sugar mixture over the top of the sweet potatoes evenly.
Whisk together the cornstarch and the orange juice and pour over the sweet potatoes. Add the vanilla extract and stir everything together until the sweet potatoes are evenly coated.
Place the butter on top of everything and add the lid back onto the slow cooker. Cook on high for 3 hours, or until the sweet potatoes are fork-tender. Gently stir everything together, trying not to break the potatoes apart too much.
(Optional step) Once the sweet potatoes are done, top with mini marshmallows and place the lid back on for 5-10 minutes to let them melt.

Try to cut the potatoes evenly, so they finish cooking around the same time.
Don't open the lid too often, because every time you do heat escapes from the crockpot and the cooking time increases.
These are done when the potatoes are fork-tender. For my slow cooker, that's around the 3 hour mark.
