Baked Peaches and Ice Cream made with fresh peaches baked with butter, pecans, and brown sugar, then topped with vanilla ice cream, ready in under 30 minutes!
Preheat the oven to 375°F. Grease a 9x13" baking dish.
Cut the peaches along the natural crease around the pit, then twist each side gently to open the peach and discard the pit.
Place the peaches cut-side-up in the baking dish. Top the peaches evenly with a piece of butter in the middle of the peach, and the pecans on top.
Mix together the brown sugar, cinnamon, and nutmeg. Distribute the brown sugar mixture evenly on top of each peach, over the pecans.
Bake for 20-25 minutes, or until the brown sugar caramelizes and a fork can go through the peaches easily. Remove from the oven and cool for about 5 minutes.
Serve 1-2 pieces in each bowl and add a scoop of vanilla ice cream on top.

Make sure your peaches are ripe, but not too soft or they'll fall apart while baking.
The peaches are done when they are fork-tender. If a fork doesn't slide through the peach easily, they need more time in the oven. This can depend on the size of your peaches, with larger peaches taking longer to cook.
If your toppings start burning before the peaches are done, just top the baking dish with tinfoil carefully.
Let them cool for a few minutes before topping with ice cream. They're hottest right from the oven, and it will melt the ice cream too quickly.
