Baked Peaches are the perfect summer dessert, made with only a few simple ingredients like fresh summer peaches, brown sugar, and butter, baked until caramelized and topped with creamy vanilla bean ice cream. You get that amazing hot and cold contrast that reminds you of fresh peach cobbler or peach crisp! This recipe comes together in less than 30 minutes, and makes about 4 servings. 

We make a trip to Georgia every year in the summertime to visit family, and on the way home we stop at a local farm to pick up a bag of fresh peaches and pecans. They taste amazing because they are at peak season, and every year I think I need to buy even more to bring home with me!

Ingredients You’ll Need

These baked peaches come together with some whole peaches, light brown sugar, salted butter, pecans, and a dash of ground cinnamon and nutmeg. I top them with vanilla ice cream after baking.

Freestone peaches will easily separate from the pit when you cut and twist each side. You’ll find these in the later summer months, around July and after.

If you have Clingstone peaches (this is what you’ll get earlier in peach season), you can still make this dish, but they won’t separate easily. Cut out peach wedges, discard the pit, and toss with the other ingredients before baking. 

How to Make Baked Peaches and Ice Cream

Cut the peaches in half, and place a piece of butter in the center where the pit used to be. Then top evenly with the pecans.

Bake at 375°F for 20-25 minutes. When the brown sugar is caramelized and a fork goes through the peach halves easily, they’re done.

Let them sit for about 5 minutes before topping with ice cream. If they’re too hot, the ice cream will melt really fast!

Leave the skin on the peaches when making this recipe. It helps the peach halves hold their structure, so they don’t soften and fall apart in the oven. 

Recipe Variations

  • Instead of baking the peaches, try brushing them with melted butter and grill for about 5 minutes on each side. Then top the grilled peaches with ice cream while serving. 
  • Drizzle the peaches with honey or maple syrup before adding the ice cream for more flavor. 
  • For a savory note, drizzle with balsamic reduction as soon as they come out of the oven. 
  • Cut the pieces into slices and add some nectarines or plums for a fruit mixture that will remind you of a stone fruit pie filling. 
  • For a sweeter dessert, try drizzling with caramel sauce or topping with chocolate chips. 
  • Instead of ice cream, try using whipped cream or vanilla greek yogurt.
  • If you use unsalted butter, add a pinch of salt to balance out the sweetness.
  • Try using other chopped nuts like almonds, peanuts, or cashews. 

Ripe peaches will have a nice peach aroma near the stem. If they don’t, then they were picked too early and won’t be as sweet or flavorful.

Ingredients
 
 

  • 4 whole Freestone peaches, cut in half, pit discarded
  • 4 tablespoons salted butter
  • 1/2 cup pecans, chopped
  • 1/4 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions
 

  • Preheat the oven to 375°F. Grease a 9×13″ baking dish.
  • Cut the peaches along the natural crease around the pit, then twist each side gently to open the peach and discard the pit.
  • Place the peaches cut-side-up in the baking dish. Top the peaches evenly with a piece of butter in the middle of the peach, and the pecans on top.
  • Mix together the brown sugar, cinnamon, and nutmeg. Distribute the brown sugar mixture evenly on top of each peach, over the pecans.
  • Bake for 20-25 minutes, or until the brown sugar caramelizes and a fork can go through the peaches easily. Remove from the oven and cool for about 5 minutes.
  • Serve 1-2 pieces in each bowl and add a scoop of vanilla ice cream on top.

Storage
Refrigerate leftover baked peaches for 3-4 days in an airtight container. I like to reheat them in the microwave or oven before adding ice cream.
Freeze for 2-3 months in a freezer-safe container.
Cooking Tips
  • Make sure your peaches are ripe, but not too soft or they’ll fall apart while baking.
  • The peaches are done when they are fork-tender. If a fork doesn’t slide through the peach easily, they need more time in the oven. This can depend on the size of your peaches, with larger peaches taking longer to cook. 
  • If your toppings start burning before the peaches are done, just top the baking dish with tinfoil carefully.
  • Let them cool for a few minutes before topping with ice cream. They’re hottest right from the oven, and it will melt the ice cream too quickly.
