This watermelon mint feta salad is everything you love about summer in one dish, perfect for potlucks, picnics, or a refreshing lunchtime side dish. Juicy sun-ripened watermelon combined with creamy feta cheese and cooling mint leaves, tossed in a tangy honey-lime vinaigrette. Everything comes together so well in just 10 minutes, with an incredible sweet and savory flavor that’s perfect next to my grilled chicken thighs or grilled shrimp

If you’re serving this at summer gatherings, I recommend making it right beforehand because the watermelon will release water as it sits. You can still prepare early by cutting up the watermelon and onion, and mixing the vinaigrette together, then refrigerating everything separately until you’re ready to assemble.

Ingredients You’ll Need For Watermelon Feta Salad with Mint

This watermelon feta salad comes together with a mix of ripe watermelon, red onion, crumbled feta cheese, and mint leaves. For the vinaigrette you’ll need fresh lime juice, honey, extra virgin olive oil, and balsamic vinegar.

To help pick a sweeter watermelon, try to find one that has a hollow sound when tapped and a nice yellow spot on one side. This shows that it ripened naturally on the vine. Also, look for the smallest possible spot on the end opposite the vine (this brown spot is where the blossom was before it was a watermelon).

Make the Lime Vinaigrette

Add all of the vinaigrette ingredients to a large mixing bowl and whisk everything together.

If it starts to separate, you can whisk it together again just before adding the watermelon. 

Toss Everything Together

Add everything else to the mixing bowl and gently toss until coated in the lime vinaigrette. 

Be careful not to break up the watermelon. You can even layer everything on a serving platter to avoid this step.

Crumbling block feta will avoid any anti-caking ingredients, giving you a creamier and better tasting feta for your watermelon salad. 

Recipe Variations

  • Try adding other veggies like chopped cucumbers, avocado, arugula, cherry tomatoes, or bell pepper. Or a more salty flavor with some Kalamata olives or pitted black olives. 
  • You can swap out the lime juice for lemon juice. Or add lime or lemon zest for more citrus dressing flavor. 
  • Try other fresh herbs instead of mint like fresh basil or dill. 
  • Add a little heat with red pepper flakes, chili powder, or a drizzle of chili crisp. 
  • Add some crunch with pumpkin seeds, pistachios, or cashews. 
  • I think cubed watermelon is faster and easier to prep, but you can also use a melon baller. 
  • Try making a platter of my Whipped Feta Dip spread thin with a drizzle of olive oil, then layering the watermelon salad on top. Or serve this with some creamy burrata. 

If your watermelon is really juicy, you can pull some of the water out by lightly salting it then letting it sit for a few minutes. Pour the juice out of the dish before adding the other salad ingredients. You can leave the salt out of the vinaigrette if you do this.

Ingredients
 
 

  • 6 cups watermelon, seedless, cubed
  • 1/2 cup red onion, finely sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped

For the Dressing

  • 2 medium limes, juice only
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1/4 teaspoon kosher salt, or to taste

Instructions
 

  • In a medium mixing bowl, whisk together all of the vinaigrette ingredients until well-combined.
  • Add the watermelon, red onion, feta, and mint leaves and gently toss everything together until mixed and coated in the dressing.

Notes

Storage
Refrigerate this watermelon salad for 2-3 days in an airtight container. You may get less days if your watermelon was already really ripe when you cut it. 
I don’t recommend freezing this recipe because it won’t defrost well. 
Cooking Tips
  • Be careful when you’re stirring everything together, because watermelon and feta are delicate and might break apart. 
  • If you’re making this ahead of time, add the feta just before serving. Once it’s mixed with the watermelon and dressing it can become a little more creamy and break apart. It tastes great but is less aesthetic! 
  • Cut down the bite of the red onion pieces by soaking them in cold water for about 15 minutes, then draining before adding to the salad. 
  • Make this faster with a seedless watermelon, or you’ll have to pick out all of the seeds.
