Gilled Turkey Burgers are the perfect summer grilling recipe, made with lean ground turkey mixed with simple ingredients like shallots, egg, garlic, and dijon. These burgers come together really fast, and you can store the patties in the refrigerator until you’re ready to grill later that day. They also freeze well, and this whole recipe is ready in under 45 minutes!

Tender and Juicy – These are the BEST grilled turkey burgers because they turn out incredibly flavorful and moist, you’ll never want anything but homemade turkey burgers again!

Easy to Make – Grilled turkey burgers are made using simple ingredients, like ground turkey, egg, dijon, and spices, with minimal prep time. They’re so easy to make that you’ll want to fire up the grill for weeknight dinner!

Ingredients You’ll Need

Ground Turkey. I recommend using 93% lean ground turkey. The higher the fat in the meat, the more the burgers will shrink because they lose some of the fat while they’re cooking.

You can also make this recipe with other ground meat like ground beef, ground chicken, or ground pork.

Gluten Free Breadcrumbs. This helps hold the burgers together, and locks some of the moisture in. If you’re not gluten free, just use regular bread crumbs.

Shallot. I like the mild sweet onion flavor that shallots give burgers. You can also use minced yellow onion or Vidalia onion.

Egg. This acts as a binder, holding everything together.

Fresh Parsley. This is totally optional, but I find that fresh herbs will help give the burgers a great fresh flavor. You can also try using green onions, fresh dill, or fresh cilantro.

Garlic. I like to put the garlic cloves through a garlic press or grate them, to help them distribute evenly through the meat mixture. You could also use 1/2 teaspoon garlic powder instead.

Dijon Mustard. This adds a really nice flavor to the burgers and helps balance everything out.

Worcestershire Sauce. This gives a really nice depth of flavor to the burgers. You could also use gluten free soy sauce instead.

Make sure the Worcestershire sauce you choose is gluten free, because this can vary by brand.

Spices. I’m keeping this recipe really simple, so all you’ll need is black pepper and kosher salt.

Gluten Free Burger Buns + Toppings. I like to grill the buns for a few minutes when the burgers come off, because gluten free bread is always better when it’s toasted!

You can also have your favorite toppings on the side like lettuce, sliced tomatoes, yellow mustard, pickles, and onion. I’d also suggest trying my Roasted Garlic Aioli, BBQ Sauce, or topping the burgers with cheddar cheese, provolone cheese, gruyere cheese, Monterrey Jack cheese, or pepper jack cheese.

For this grilled turkey burgers recipe, you’ll need a medium mixing bowl and a grill. If you don’t grill, you can also make these on a cast-iron skillet.

How to Make Grilled Turkey Burgers

Add all of the ingredients to a medium mixing bowl. With your hands, gently mix everything together until just combined, being careful not to over-mix.

Form the mixture into 4 burger patties, pressing gently on the middle to make sure they’re even. Refrigerate for 20 minutes before cooking.

On a grill over medium-high heat, cook the burgers for 5-6 minutes, then turn over and cook for an additional 5-6 minutes on the other side.

The burgers are done when they’re fully cooked through and have an internal temperature of 165°F with a meat thermometer.

Once the burgers are done and removed from the grill, place the hamburger buns on the grill and toast for 1-2 minutes, or until lightly golden brown. Assemble the burgers with your toasted buns and favorite toppings and serve.

The key to keeping the patties together is in the ingredients, and the prep. Don’t skip the breadcrumbs and egg, because these act as a binder that holds everything together. They also keep moisture in the burgers, keeping them from drying out.
The other tip I can give you is to make the burger patties and refrigerate them on a sheet pan for 20-30 minutes, because the colder patties will hold together better when they hit the heat of the grill.

Recipe Tip! Making an indent in the middle of the raw burger patties before grilling can help them cook more evenly, and prevent the middle from taking longer to cook than the outside of the burgers.

Cooking Tips

  • These burger patties aren’t going to shrink much on the grill, so make them the size that you want them to be.
  • To make the grill nonstick, take a paper towel and dip it in canola or vegetable oil and lightly grease the grill grate before turning the grill on. Make sure it’s very light, you don’t want any oil dripping into the grill. If it’s dripping, you’ve used too much!
  • Don’t press on the burgers with the spatula when cooking, it will release some of the burger juices and cause them to dry out.
  • If the burger mixture is sticking to your hands when you’re forming the patties, use a few drops of olive oil on your hands to make them nonstick.
  • Grilled turkey burgers are done when they reach an internal temperature of 165°F. Don’t cook them past this, because they can dry out easily.
