Happy Tuesday, everybody!

Around the holidays I always get busy planning things. They should really call this appetizer season, considering how many parties I’ll be attending over the next week. From Christmas, to New Years, and then Superbowl Sunday, I need appetizers that are fast and easy to make to fit into my busy schedule.

It doesn’t get much faster or easier than Bacon Wrapped Tater Tots!

Things have been so crazy at my house lately, I really needed a break. I had every intention of bringing you something sweet, indulgent and potentially smothered in caramel or Nutella. I really, honestly did. But I think I over-committed myself to too many projects this week. ::sigh:: But I love creating things, so I’ll probably do it again.

Don’t discount the Nutella just yet. I have a big jar of it begging to be baked into something sitting on my kitchen counter staring at me.

I’m determined to make two of my Christmas presents this year, so I spent a good amount of time at my sewing machine this weekend. The first thing I made came out beautifully and I’m very proud of it, I will post a picture right after my sister opens it on Christmas. I’m hoping to finish my second project by tomorrow.

We also went out with friends this weekend to a pub for dinner and drinks, and then to see Star Wars (I loved it!), to celebrate my birthday. After we got home, Andrew started having pain in his back from sitting in the movie theater seats, which turned into his back totally being out. I feel bad that he’s in so much pain, but he’s already starting to feel better so I’m hoping he’ll be up and moving before Christmas day.

Now I’m going over the menu for my family’s annual Christmas party with my Dad, trying to figure out everything we’re going to make. So, you can see why I really needed an appetizer that’s quick and easy this year. You know, so I can spend more time on the important things, like desserts. 

 

Bacon Wrapped Tater Tots

A few weeks ago I sent a batch of these with Andrew to bring to his friend’s house, who was having a football party, and they just devoured these. Who doesn’t love bacon and tater tots? In my experience, they’re always a hit.

It’s a strong second to my Crispy Oven Baked Garlic Parmesan Wings, the other ultimate football food.

We even served these last year at our engagement party (Hey, give the people the food they want, right?). My dad and I catered all of the food ourselves, and we went through two trays in no time! Everybody loved them.

Bacon Wrapped Tater Tots

You may be able to tell from the photos that I used turkey bacon in this recipe. You can use pork bacon if you’d like, it’s just my personal preference to use turkey. It really works both ways.

This is probably the fastest hot appetizer you’ll ever make.

Seriously, all you need to do is wrap a piece of bacon around a tot, put a toothpick in it, and bake.

That’s it.

It’s really that easy!

Ingredients
 
 

  • 2 lbs tater tots, defrosted, gluten free
  • 2 lbs bacon, cut in half

Equipment

  • Toothpicks
  • Sheet pan

Instructions
 

  • Preheat oven to 425°F. Grease a large baking sheet (or line with parchment paper).
  • Wrap one piece of bacon around one tot. Put toothpick through bacon tot to hold in place and put on baking sheet. Repeat for all pieces.
  • Bake for 20-25 minutes, or until bacon is crispy and cooked through.
