This is probably the easiest pudding I have ever made in my life. You literally stir everything together, then stick it into the refrigerator until the chia seeds get a chance to absorb the liquid, giving us that thick creamy pudding texture we know and love. Easy Chocolate Chia Seed Pudding is my new go-to recipe for when I’m craving something a little sweet, but still want to keep it a little bit healthy.

I like to throw them into smoothies, onto wraps, and now some chocolate chia seed pudding! I’m not going to lie, this was my first time making this recipe. And I’m absolutely in LOVE with it! It’s not super sweet, so if you’re looking for the store-bought sweet stuff, you’re not going to get it here. This is naturally sweetened down-home goodness.

The chia seeds turn into a sort of gel once they absorb the liquid, which kind of reminds me of a small version of tapioca balls. So you’re going to get some texture here, too. In my opinion, it makes it even better! You do have to refrigerate the chocolate chia seed pudding for a bit to let it thicken, so I recommend making this first, then finish the rest of your meal. By the time you’re done with dinner, the chocolate chia seed pudding will be ready to go!

Ingredients
 
 

  • 2 cups milk
  • 1/2 cup chia seeds
  • 4 tbsp cocoa powder
  • 4 tbsp turbinado sugar
  • 4 tbsp mini chocolate chips
  • 2 tbsp honey (or to taste)
  • 1 tsp almond extract
  • 1 tsp cinnamon

Instructions
 

  • In a mixing bowl whisk together cocoa powder, sugar, chia seeds, and cinnamon. 
  • Add milk, almond extract, chocolate chips, and honey and stir to combine. Let sit for about 15 minutes, stirring occasionally. 
  • Cover bowl and refrigerate 1 1/2 - 2 hours, or until pudding has thickened. Stir before serving.
