This is one of my favorite go-to snacks when I’m in the mood for potato chips. Easy Kale Chips are the perfect healthy swap for your favorite crispy snacks, while still satisfying your crunchy cravings!

I’ll admit it, I’m a savory person. Give me the choice between a piece of cake and a bag of chips, and the bag of chips will win hands-down, every time.

Potato Chips. Wonderful for my mood (I’m a proud contestant of the emotional-eating olympics), terrible for my waistline. Hey, I try to keep it somewhat healthy, you know? 

Easy Kale Chips are the perfect solution for all of my potato chip needs. One bunch of kale makes a big bowl of them! Since you’re essentially eating roasted leafy greens, you don’t really have to worry about calories here. Leaving this snack open to the “mindlessly eating while watching a movie” category.

I’m writing this post while sitting by the pool, under the Florida sunshine. Andrew has wandered off after a nearby Pokemon (or as he refers to it, a poke-adventure). Life is pretty good right now.

Have you heard of this PokemonGo game? I’ll admit it, I’m playing, too. It’s not just an entertaining game, it’s also about the nostalgia. And about how I can go places and have something to occupy my introvert self. Mine was the original Pokemon generation! It’s a lot like a reunion show on TV, but for gamers. Not quite the original thing, but it’s still fun nonetheless.

Also, because of all of the haters I’ve seen about this game, I’ll say this: I’ve never seen so many people walking around the park, interacting with each other, and just smiling and having a good time outdoors instead of sitting in front of the television all day.

In my book, that’s a good thing.

For these easy kale chips, you’re going to want to eat them around the same time you cook them. In my experience, they don’t really last overnight or past a few hours.

I mean, they’ll be edible, but they won’t really be crispy anymore.

Speaking of crispy, the secret to the crispy crunchy goodness of these kale chips is the oil. Make sure the oil is pretty evenly dispersed. For this, I always use olive oil cooking spray. The mist will coat the kale more evenly than pouring the oil on yourself.

Now if you’ll excuse me, it’s pretty hot out here and that cool pool water is calling my name.

Ingredients
 
 

  • 1 bunch curly kale
  • 3 tbsp extra virgin olive oil, or cooking spray
  • salt and pepper, to taste

Equipment

  • Sheet pan

Instructions
 

  • Preheat oven to 350°F. Grease baking sheet or line with parchment paper.
  • Use a knife to remove and discard stems. Cut leafy parts into medium sized pieces. Rinse and carefully dry leaves with paper towel.
  • Spread kale out on baking sheet, leaving a little bit of room between each leaf. Spray (or drizzle) with olive oil until leaves are completely coated.
  • Bake 10-12 minutes, or until leaves are crispy. Add salt and pepper to taste.
