Do you know what I love most about pork loin recipes? You know, besides for the delicious part? It’s that I can make a big pork loin roast that feeds my entire family without breaking the bank! Seriously, meat is expensive, so I find myself always trying to do more with the cheaper cuts of meat. And BBQ Slow Cooker Pork Loin & Sweet Potatoes is the perfect dish both in cost and flavor. BBQ Pork Loin Recipe uses flavors you already love!

I use my all-time favorite gluten free BBQ sauce for this recipe, and I’d also consider my honey BBQ sauce, depending on what I have on hand.

But that’s one of the best parts about this BBQ pork loin recipe! You can throw whatever BBQ flavor you love on top the pork, and the sweet potatoes and bbq pork loin will just soak up all of the flavor, leaving behind the most flavorful thing you’ll make all week!

Crock pot pork loin lets you relax while dinner cooks!

One of the things I really love when making crock pot pork loin is that you don’t really have to pay attention to it while it’s cooking. The slow cooker takes care of everything for you! I like to get a lot of household work done while crock pot pork loin is cooking.

Personally, I like to let this crock pot pork loin cook low and slow. If you have the time, I’d highly recommend it. Pork loin is just a tougher piece of meat to begin with, so it starts to dry out if you cook it too fast and furious. But give it time to come to temperature, while simmering in a sweet and tangy BBQ sauce, and you’ll have something that you can cut with a spoon.

But just in case, you should know what a pork loin internal temperature should be.

According to the USDA, the proper pork loin temp is 140F. It’s important to meet the pork loin internal temperature guides, because that’s where your food is considered safe to consume. In fact, the USDA also points out that the roast may be pink in the middle, but as long as the pork loin temp is 140F throughout, then it should be safe.

Ingredients
 
 

  • 4 medium sweet potatoes, peeled and cut into 1-inch pieces
  • 1 4 lb boneless pork loin roast
  • 1 medium onion, chopped
  • 2 cups BBQ sauce
  • 1/4 cup gluten free all-purpose flour
  • 3 tbsp butter
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions
 

  • Heat butter in a large sauté pan. Mix together salt, pepper, and flour. Dredge pork loin in flour and sear 1-2 minutes on each side, or until golden brown. 
  • Place sweet potatoes and onion in slow cooker. Add pork loin on top, and sprinkle with garlic powder. Pour BBQ sauce over pork loin.
  • Put lid on slow cooker and cook on LOW for 8 hours, or HIGH for 4 hours

Notes

Click on the time in the instructions to start a timer!
Pork loin is a less fatty cut of meat, so I would suggest using the low slow cooker setting if possible.
