Paleo Beef Stew In The Slow Cooker is one of your favorite dinners with a grain free twist. Tender beef slowly cooks in a broth with traditional ingredients like onions, celery, carrots, and nutritious sweet potatoes. The best part is that you can just set it and forget it, and have a hot dinner at night!

I’ve been jumping head first into the realm of Paleo recipes lately. I’m not going full on Paleo, but I do love how the recipes are grain free – which is awesome to not have to worry about when you’re gluten free. And Paleo Beef Stew In The Slow Cooker is my latest endeavor. I kept a lot of the basic ingredients – like beef (obviously), celery, carrots, etc. But instead of the usual white potatoes, I’ve used sweet potatoe. Yum!

Let’s get on the same page here for a minute. I know what you’re probably thinking. Sweet potatoes? In stew?? Right. I get it. It’s… different. But let me tell you, this paleo beef stew invites sweet and savory into the same party here. One just brings out the other in the most delicious way possible. Trust me, you might never go back to white potatoes again.

And guess what? None of the major allergens here! Not that there’s usually eggs or milk in beef stew, but I’m talking about the grains here. No wheat (hence gluten free), or rice, or barley. None. Whatsoever. So if you’re not a big fan of grains, this recipe is definitely for you.

I have an amazing beef stew recipe that I used to make back in college. But it takes hours to make, first on the stove and finishing in the oven. I love making it, because I love cooking and all that. But it’s not really something I’d make on a weeknight, or otherwise busy day. Which is where the slow cooker comes in! It just takes all of that drama away from the recipe.

You could brown the meat beforehand, if you want to. And it would be good. But I like to have slow cooker recipes that are super simple. Because that’s kind of the point of the slow cooker, isn’t it? So that’s why I made this paleo beef stew super easy to make.

Because the easier a recipe is, the better, am I right?

Paleo Beef Stew In The Slow Cooker is one of your favorite dinners with a grain free twist. Tender beef slowly cooks in a broth with traditional ingredients like onions, celery, carrots, and nutritious sweet potatoes. Servings: 6 servings
Calories: 338 kcal
Ingredients
  • 4 cups beef or vegetable broth
  • 4 medium carrots peeled and chopped
  • 4 medium celery stalks chopped
  • 3 large sweet potatoes peeled and cut into 1-inch pieces
  • 2 lbs beef stew meat cubed
  • 1 large onion chopped
  • 1/4 cup tapioca flour
  • 1 tsp dried rosemary
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tsp ground thyme
  • 1/2 tsp black pepper
Instructions
  1. In a large bowl, coat the beef with tapioca flour. Place in slow cooker.

  2. Add all other ingredients to slow cooker and pour broth over everything. Stir ingredients together gently. 

  3. Cook on HIGH for 4 hours, or on LOW for 3 hours, or until beef is cooked through and potatoes can be cut easily with a fork.
