It’s definitely BBQ season here in Florida, which is why I wanted to share a little dish I love to whip up when I’m either short on time, or (let’s be honest) just craving it: Amish Broccoli Salad With Craisins. I’ve even been known to make a dish of this on Sunday and bring it to work for the week!

Traditionally, this dish is made with about a pound of mayonnaise.

Ok, maybe I’m exaggerating that one a little bit, but it might as well be. 

Because I’m making conscious efforts to eat healthier, and vegetables don’t count when you smother them in unhealthy things, I decided to lighten this one up a little bit. So instead of mayo, I’ve used nonfat plain greek yogurt. And you know what? You can’t even tell the difference. After all of the spices and other ingredients are in there, it tastes the same!

I’ve always loved broccoli, in all its forms. Raw, cooked, roasted, you name it. I was a weird kid. But that’s another story.

The point is, having raw broccoli and cauliflower in this salad is pretty much the best thing ever, and the toppings are pretty customizable. I like to throw in some cheddar (because broccoli and cheddar… duh), bacon, and craisins for a touch of sweetness.

And if you’ve never tried craisins in a savory dish before, tonight is your night! I know. Craisins and cheese. It sounds weird, but trust me, it’s actually fantaaaastic, I promise. Pinky swear.

You could also throw some sunflower seeds in there, raisins, or bell peppers. The sky is the limit, so feel free to go crazy here.

Ingredients
 
 

  • 1 head cauliflower
  • 1 head broccoli
  • 1 cup plain nonfat greek yogurt
  • 1 cup light sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 lb bacon, cooked crispy, chopped
  • 1/2 cup sugar
  • 1/2 cup dried cranberries

Equipment

Instructions
 

  • Chop cauliflower and broccoli into bite-sized pieces. Place in large bowl with craisins, cheddar, and bacon. 
  • In a separate bowl, stir together yogurt, sour cream, and sugar. Pour over broccoli and stir all ingredients together until well combined.
