Balsamic Tomato Bruschetta – Gluten Free!

Balsamic Tomato Bruschetta is a quick and easy appetizer that your guests won’t be able to get enough of. Crispy gluten free baguettes are sliced and toasted with garlic and olive oil, then topped with fresh tomatoes, balsamic vinegar, and basil. It’s both simple and impressive!

Balsamic Tomato Bruschetta
Here’s a dish that I absolutely love to serve when I have company over, Balsamic Tomato Bruschetta. It’s super quick to make, it looks really fancy, and everyone loves it! Plus, it goes perfectly with white or red wine, which is what I’m usually serving at my house. My favorite part about this dish is that you can make a big batch of it without spending a fortune, and your guests have something to nibble on all night.
I’ve even been known to have this for lunch all by itself!
Andrew and I have been doing a lot of exploring recently and we found the best little driving range! Which is perfect because Andrew’s been wanting to take up golf since we move here. It’s not something you get to do much of up in New York, based on how cold it is for most of the year. But down here in Florida, it’s pretty much a year-round event.
I’ve actually never golfed on a real golf course before, because my grandmother was always too afraid that I’d hit a ball into one of the surrounding houses. Mwah? Pshhh.
So we finally made our way over to an actual golf course and tried it out. Now that I’m an adult, and I can do those types of things. And needless to say, we loved it! Well, Andrew loved it more, I think my favorite is still the driving range. But I still had a lot of fun, and we’re definitely going to go back.
And to celebrate our find, we got a group of friends together to go out to the driving range, stopped at my house for some before-golf-snacks, and served up some Balsamic Tomato Bruschetta! It went really well with the Concha y Toro Gran Reserva Cabernet Sauvignon and Savignon Blanc. And it really got everyone in the mood to get out on the course and just have fun.

Balsamic Tomato Bruschetta
- 6 medium roma tomatoes, chopped
- 5 large basil leaves, chopped
- 1/2 small red onion, chopped
- 2 tbsp balsamic vinegar
- 2 tbsp extra virgin olive oil
- 2 tsp garlic powder
- 1/2 tsp salt, or to taste
- 1/2 tsp black pepper
- 2 large gluten free baguettes
- Preheat oven to 400°F. Place parchment paper on baking sheet.
- Slice baguettes and place pieced on baking sheet. Drizzle with 2 tbsp olive oil on baguettes, and sprinkle with 1 tsp garlic powder. Bake 8-10 minutes, or until baguettes look crispy. Remove from oven and set aside.
- Stir together all other ingredients in a large bowl. Top toasted baguette pieces with tomato mixture and serve.
