These Buffalo Chicken Burgers are one of my favorite weekly meal prep recipes, made with wholesome ingredients like lean ground chicken, fresh green onions, and plenty of seasoning and buffalo sauce. You can add all of your favorite toppings, like pickles, sliced tomato, butter lettuce, or even blue cheese crumbles, blue cheese dressing, or ranch dressing. Plus they’re ready in under 45 minutes, and freeze well when made ahead of time!

Buffalo Sauce Flavor – These burgers have a great buffalo sauce flavor, but it’s not overpowering, just a little spicy. I like to serve extra buffalo sauce on the side so guests can add as much as they’d like!

Quick & Easy – These burgers are quick and easy to make, and you can cook them on the grill or on the stovetop.

Ingredients You’ll Need

Ground Chicken Breast. I like to make these burgers with ground chicken because it’s extra lean and great for when you want something on the lighter side with a ton of flavor. You can also make these burgers with ground turkey.

Egg. This acts as a binder and helps hold everything together. The yolk also adds a little bit of fat which helps with the flavor.

Gluten Free Breadcrumbs. These help hold the burgers together so they don’t fall apart when on the grill. I like to use plain breadcrumbs, but seasoned would work, too.

If you’re not gluten free, just use the regular ones.

Green Onion. I like to add green onion for flavor, you can also use chives, fresh dill, or fresh parsley.

Buffalo Sauce. This is where all of the flavor comes from! If you want to make it from scratch, check out my Homemade Buffalo Wing Sauce recipe (it’s basically hot sauce with butter in it).

Worcestershire Sauce. I like to add this for a nice savory flavor, which helps when you’re using really lean cuts of meat for something like burgers. Make sure yours is gluten free, because this can vary by brand.

Spices. This is really easy because all you need is some onion powder, garlic powder, and black pepper. You can also use fresh minced garlic for a stronger garlic flavor.

Gluten Free Hamburger Buns. If you’re not gluten free, you can just use the regular ones.

For these buffalo chicken burgers, you’ll need a medium mixing bowl and a grill (you can also make these using a saute pan on the stovetop).

How to Make Buffalo Chicken Burgers

Add all of the ingredients to a medium mixing bowl. With your hands, gently mix everything together until just combined, being careful not to over-mix.

Form the mixture into 6 burger patties, pressing gently on the middle to make sure they’re even. Refrigerate for 20 minutes before cooking.

On a grill over medium-high heat, cook the burgers for 5-6 minutes, then turn over and cook for an additional 5-6 minutes on the other side. The burgers are done when they’re fully cooked through and have an internal temperature of 165°F with a meat thermometer.

Once the burgers are done and removed from the grill, place the buns on the grill and toast for 1-2 minutes, or until lightly golden brown. Assemble the burgers with your favorite toppings, any additional buffalo wing sauce, and serve.

Recipe Variations

  • If you want these buffalo burgers to be even spicier, you can add a pinch of cayenne pepper, hot sauce, or red pepper flakes to the burger mixture. Or top them with additional buffalo sauce when serving.
  • If you want something lower carb, try making lettuce wraps with butter lettuce instead of using a bun.
  • Add some veggies with diced bell peppers, onion, or jalapeños. You can also throw in a handful of chopped spinach, grated zucchini, or shredded carrots.
  • Make this cheesy by topping at the end with Colby-jack cheese, pepper jack cheese, or throwing 1/4 cup of parmesan cheese into the burger mixture.
  • You can also make this recipe with ground turkey or ground beef.
  • Make these in the air fryer at 375°F for 10 minutes, flipping them halfway through, or until they reach an internal temperature of 165°F.
  • For more flavor, add a tablespoon of my homemade Ranch Seasoning.

Why did my buffalo chicken burgers turn out dry?

Ground chicken is already a very lean meat, so you need to make sure you follow the recipe to prevent them from turning out dry. Don’t skip the egg, buffalo sauce, or breadcrumbs, which both help keep moisture in the burger. You also need to watch your cook time, and take them off of the heat when they reach temperature.

Recipe Tip! To prevent the burgers from sticking, dip a paper towel into some canola oil and lightly grease the grill grates before turning on the heat. You don’t need a lot of oil, just a small amount so it doesn’t drip into the grill. If your grill is smoking, you added too much!
