Easy Almond Coleslaw

Easy Almond Coleslaw is sweet and crunchy, made with shredded cabbage, slivered almonds, and carrots mixed with a tangy coleslaw dressing, ready in only a few minutes!
I like to make this using my Creamy Coleslaw Dressing recipe. You can serve this almond coleslaw with BBQ Chicken Drumsticks, Smoked BBQ Ribs, or Moonshine Crockpot Pulled Pork.
Easy Almond Coleslaw
Easy Almond Coleslaw is ready in under 10 minutes using 1 bowl, with only a few ingredients in a creamy tangy dressing. It’s the perfect side dish to add some crunch, with a really nice nutty flavor from the almonds. I love to make this for a BBQ dinner or potluck, or just to keep in the refrigerator as a side dish for lunch. You can substitute the cabbage for broccoli slaw to add some more nutritious greens to the dish, or sub the almonds for walnuts.
What is coleslaw dressing made of?
Coleslaw dressing is the perfect mix of sweet and tangy, in a creamy base.
For the Base
Typically you’ll see mayo, or a mix of mayo and sour cream to make the creamy coleslaw base. I’ve also seen recipes where people swap out the mayo for greek yogurt, to try and cut calories while increasing protein. Greek yogurts works, but it does change the flavor, so make a small amount and make sure you like it first.
For the Sweet
For the sweet part, you can try a few different things. Most commonly, you’ll see sugar. You can also add a splash of juice, like pineapple or orange. And the coleslaw mix itself can add some sweet from dried fruits like cranberries or apples.
For the Tangy
The tangy part is arguably the most important part of the coleslaw. I like to use apple cider vinegar, because I just like the flavor of it better. But most recipe you’ll find regular white vinegar, or sometimes red vinegar.

- Walnuts
- Sliced apples
- Chopped celery
Tips for Making Almond Coleslaw
- I recommend refrigerating this for at least an hour before serving. It’s not mandatory, but the flavors will come together really nicely when it sits in the refrigerator.
- If you want more sweetness, add dried fruits like raisins, dried cranberries, or dried apricots. You can also add some sliced apples.
- You can use regular mayo, I just use the light version to cut some of the calories in the dish.
- Feel free to swap out the cabbage for broccoli slaw, or any chopped salad, crunchy veggie type mix. Sometimes I chop up some Brussell sprouts to throw in there, too!
- This is almond coleslaw, but you can swap the almond out for walnuts, cashews, or pecans.
- If it’s too sweet for your taste, cut back the sugar and add more vinegar. If it’s too tart, add more sugar.

Ingredients
For the Coleslaw Mix
- 20 oz cabbage, shredded
- 1 cup carrots, shredded
- 1/2 cup slivered almonds
For the Dressing
- 1 cup light mayonnaise
- 1/2 cup sugar
- 3 tbsp apple cider vinegar
- 1/2 tsp onion powder
- 1/4 tsp celery salt
- 1/4 tsp poppy seeds

Instructions
- In a large bowl whisk together dressing ingredients. Add cabbage, carrots, and almonds to the bowl and toss to combine everything with the dressing. Serve immediately or refrigerate in an airtight container.
