Bacon Wrapped Sausage Stuffed Jalapenos

It might be January, but appetizer season is not quite over yet! I’ve had a special request from Andrew to come up with something for his to serve at his big game party, and did he ever love these! Bacon wrapped sausage stuffed jalapeños are meaty, cheesy, spicy, and all of the things you’d expect from a good pub food appetizer. Plus, you can make a big batch of them at once, because they’re really simple to make. In this game, everybody wins!

I know, you hear jalapeño and think one of two things. Either you think about how amazing they are, or you think about your mouth on fire. I’m on a little bit of both sides. On one hand, they just make certain dishes way better. Nachos, anyone? On the other hand, I’m pretty Irish, and when I eat spicy food my eyes involuntarily start tearing up. I like to think I’m crying because of how good the food tastes.

But you don’t really have to worry about that with these. I don’t know if it has to do with baking the jalapeños, or if it’s more to do with the fillings and bacon masking the spice. But they are definitely not as bad as you’d think when it comes to the heat level. In fact, I didn’t even tear up once. And that’s saying something for me. I mean, don’t get me wrong, it’s not completely gone. It’s just significantly less than it was before.

Ingredients
 
 

  • 1 lb pork sausage ground meat
  • 1 8oz package Neufchatel cheese
  • 1 cup grated parmesan
  • 10 medium jalapeños, cut in half and seeds removed
  • 20 pieces bacon
  • 2 tbsp ranch seasoning

Instructions
 

  • Preheat oven to 375F. Line a baking sheet with parchment paper and place jalapeños on baking sheet, open-side-up.
  • In a medium sauté pan cook pork completely. Add seasoning and mix well. 
  • Melt Neufchatel cheese and parmesan over pork, stirring all ingredients together. Remove from heat and allow to cool slightly.
  • Add about 1-2 tbsp filling to half a jalapeño. Wrap jalapeño with bacon, and place back onto sheet pan. 
  • Bake for 15-20 minutes, or until bacon is cooked through.
