- 1 lb ground beef
- 1 6oz can tomato paste
- 4 medium Yukon gold potatoes cut into 1-inch pieces
- 3 medium carrots chopped
- 3 medium celery stalks chopped
- 1 medium yellow onion chopped
- 1 small jalapeno seeded and chopped
- 3 cups beef broth
- 2 cups cheddar cheese shredded
- 1 1/2 cups milk
- 1/2 cup sour cream
- 1 cup dill pickles chopped
- 3 tbsp gluten free all-purpose flour
- 1 tsp dried parsley
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp black pepper
In a sautee pan over medium heat cook beef until almost done. Add spices (salt, pepper, thyme, garlic, parley), and flour. Stir everything together and add to slow cooker.
Add all other ingredients except for cheese, milk, and sour cream into slow cooker and stir together.
Cook on HIGH for 3 1/2 hours, or LOW for 7 1/2 hours. Add cheese, milk, and sour cream. stir to combine, and cook an additional 1/2 hour.
