Ingredients
 
 

  • 1 lb ground beef
  • 1 6oz can tomato paste
  • 4 medium Yukon gold potatoes, cut into 1-inch pieces
  • 3 medium carrots, chopped
  • 3 medium celery stalks, chopped
  • 1 medium yellow onion, chopped
  • 1 small jalapeno, seeded and chopped
  • 3 cups beef broth, gluten free
  • 2 cups cheddar cheese, shredded
  • 1 1/2 cups milk
  • 1/2 cup sour cream
  • 1 cup dill pickles, chopped
  • 3 tbsp gluten free all-purpose flour
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Equipment

  • Slow Cooker

Instructions
 

  • In a sautee pan over medium heat cook beef until almost done. Add spices (salt, pepper, thyme, garlic, parley), and flour. Stir everything together and add to slow cooker. 
  • Add all other ingredients except for cheese, milk, and sour cream into slow cooker and stir together. 
  • Cook on HIGH for 3 1/2 hours, or LOW for 7 1/2 hours. Add cheese, milk, and sour cream. stir to combine, and cook an additional 1/2 hour.
