Rotisserie Chicken Salad is the perfect weekday lunch recipe because it’s quick and easy, with no cooking required and the perfect blend of sweet, savory, soft, and crunchy ingredients! You can add whatever you’d like to your rotisserie chicken salad. If you don’t like the sweet, leave out the fruit and try adding diced tomato instead. Just make sure that you choose a gluten free rotisserie chicken, and if you don’t have a place to get one in your area, this will also work with diced chicken breasts!
What are the main ingredients in chicken salad?
Chicken salad always starts with a base of diced or shredded chicken with a creamy sauce, usually made out of mayo. From there, you can get really creative! I like to add seasonings to my rotisserie chicken salad, like curry powder. If you want to keep it more on the plain side, I would suggest just salt and pepper to taste. You can also add some extra ingredients like raisins or craisins for sweetness, or nuts like almonds, pecans, or walnuts for crunch. I’ve also used fresh fruit like apples and grapes, or vegetables like diced onion, celery, or bell peppers.

If you want to make rotisserie chicken salad ahead of time, I would recommend shredded your rotisserie chicken and combining it with the seasoning and freezing. When you are ready to make chicken salad, all you have to do is mix the pre-shredded chicken with the mayo.
What is a good substitute for mayonnaise?
Mayonnaise gives a key flavor in chicken salad, but you can definitely substitute it out if you want to. Try using Greek yogurt, or pureed avocado and sour cream instead. You can also try hummus, or just some olive oil, vinegar, and seasoning.

Rotisserie Chicken Salad
Ingredients
- 1 cooked rotisserie chicken, skin removed, chopped
- 1 medium celery stalk, diced
- 1 medium granny smith apple, peeled, cored, diced
- 1 cup mayonnaise
- 1/2 cup dried cranberries
- 1/2 cup sliced almonds
- 1/4 cup onion, diced
- 1/2 tsp curry powder
- 1/4 tsp black pepper
- 1/4 tsp salt
Instructions
- Add rotisserie chicken to a large bowl with mayonnaise and spices and stir together. Add all other ingredients and stir until well combined. Refrigerate for 1 hour and serve cold.
